What’s up R’s sleeve for New Year’s Eve?

I’m having a NYE gathering this year, which means I’ve been wracking my brain to come up with some clever new recipes to offer my family and friends. Luckily, I came up with two super easy recipes—a salsa and a tapenade—that you’ll just have to try!

 

Roasted Red Pepper and Artichoke Tapenade 

Ingredients

7 oz. roasted red peppers from a jar (drained) (Yup!)

6 oz. jar of artichoke hearts (drained) (My mid-western mom loves these!)

4 garlic gloves

1 Tbsp fresh lemon juice

1/4 cup capers (drained) 

1/2 cup chopped fresh parsley

1/2 cup freshly grated Parmesan cheese

Add salt and pepper to taste

 

Instructions 

Mix all ingredients in a Cuisinart or any type of food processor. 

Spoon into a pretty dipping bowl and serve with my toasted baguette slices recipe. 

 

Plan ahead note: Made a day ahead, tightly cover and refrigerate. 

 

Mango Salsa

Ingredients

4 mangoes 

8 cherry tomatoes 

2 small white onions 

2 small jalapeño peppers

3 Tbsp fresh cilantro

Juice from one lemon and one lime

Add salt and pepper to taste

Add a dash of chives 

 

Instructions 

Dice and cube the mangos, tomatoes and onions. 

Chop jalapeños and cilantro. 

Mix all ingredients in a decorative bowl.

Serve with homemade tortilla chips or really authentic ones on the side. 

 

 

I’m also going to offer my guests two cocktails to celebrate NYE. A pomegranate martini and a glass of rosé champagne. But not Veuve! What?!?! Yes, that’s right. For the martini, buy pomegranate vodka, add a splash of pomegranate juice and fresh lime juice and top with pomegranate seeds. So festive, so fun! As for the champagne this season, I’ll offer a Brut Rosé called Gruet, which uses the traditional méthode champenoise but is produced in New Mexico. Try it and let me know what you think!
