We all scream for Ice Cream Sandwich Day! In 1899 this delicious delight was founded in NYC and it only cost one penny. Look how the ordinary ice cream sandwich from 1899 has changed into today’s 2020 version. I can still hear the sound of the ice cream truck coming down to the Barrington Beach and remembering that feeling from when I was a child. What a yummy creation with so much history! And, the best part is, it’s easy to make at home.
Here’s my delish recipe for all to enjoy this summer:
Ingredients
A box of graham crackers or wafers (store-bought is perfectly fine)
A bag of marshmallows (melted)
A bag of milk chocolate morsels (melted)
12 Reese’s peanut butter cups (not the mini ones)
Vanilla ice cream (buy the best quality you can find)
Directions
Break your graham crackers into 24 squares and lay them down on a large baking sheet.
Spread melted chocolate and a Reese’s peanut butter cup on 12 graham cracker squares.
Spread melted marshmallow on the other 12 pieces.
Take scissors and cut the cardboard off of the ice cream container so that only the ice cream remains.
Use a sharp, large knife and cut the ice cream into thirds lengthwise, then cut each into squares.
Lay each ice cream square onto the graham crackers with the chocolate and peanut butter cup.
Take the marshmallow sides (face down) and press into the top of the ice cream to form each sandwich.
Freeze immediately for at least four hours or until fully set. Easy peasy!
