Holiday App Recipe

During this pandemic, non-cooks have become grand cooks with more time to try out new recipes. If you’re looking for something new to try, I have an easy recipe that will be great for the holidays.

It’s a yummy appetizer to serve or bring to a socially-distanced holiday party. It’s also a great housewarming gift or holiday gift if you place all the (uncooked) ingredients in a bag or basket including a recipe card for your host or friend to make on their own.

Goat Cheese and Onion Focaccia

Ingredients

2 cups sliced white onions

1 tablespoon butter or olive oil

1/2 tsp dried sage leaves

1 focaccia (any Italian grocery store will sell this. I also recommend Liguria in SF but call ahead because they close when they sell out!)

1/4 cup sun-dried chopped tomatoes

2-3 ounces of goat cheese (I love Humboldt Fog)

Directions

Pre-heat oven to 350 degrees.

Over low heat, sauté the onions in butter or olive oil (I like to use a combo of both!) until lightly browned or caramelized. Stir in the sage.

Arrange the sautéed onions on the focaccia. Sprinkle with tomatoes and the cheese.

Bake for about 15 minutes or until the cheese has melted.

Cut into wedges or small squares and mangia!
