February 9th was National Pizza Day, but we all know that we can eat pizza any time of the year. So, when your cravings set in, I have an easy pizza recipe for you to make. It’s full of healthy veggies and it’s sauce-free!
The crust is store bought, but the rest of the recipe calls for fresh ingredients that you’ll need to sauté yourself. If you’d like some more delicious pizza recipes or would like me to plan your next make-your-own pizza party, Just Ask!
Hot Sausage and Veggie Pizza
Ingredients:
Any store bought corn meal crust (I prefer Vicolo, which includes two pizza crusts)
1lb. hot Italian sausage links
1 Tbsp of olive oil
1 bunch of green onions, chopped (It’s okay to use the green stems if you wish)
1 green pepper, chopped
1 red pepper, chopped
2 baby bok choy, chopped
1 bunch of Broccolini, chopped
1 bunch of spinach, broken into pieces
1 bunch of arugula, broken into pieces
1 cup of mozzarella cheese, grated
1/3 cup of Parmesan cheese, grated
Chopped parsley for taste
Instructions:
1. Read the directions on the back of the corn meal crusts as to how to bake them.
2. Meanwhile, slice the sausage links into small pieces and sauté them in a large non-stick skillet over medium-high heat with the onions until well-cooked.
3. Remove the sausage pieces from the pan and move to another bowl.
4. In this same skillet, add the olive oil and sauté and steam the peppers, bok choy, and Broccolini for 5-7 minutes until softened. Cover the skillet to act as a steamer.
5. Add the spinach and arugula for about 2 minutes or until wilted.
6. Add the sautéed sausage and onion mixture back into the skillet and carefully mix.
7. Take your pre-warmed pizza crusts and add the sausage veggie mixture on top of each crust. Add your mozzarella cheese and then sprinkle on the Parmesan cheese and chopped parsley.
8. Bake for 12-15 minutes or until cheese is bubbly.
I don’t think you need to have a side salad with this pizza because you’ll be eating seven different kinds of veggies! Yum!
