Brittle Bones Halloween Candy

Boo! Are you ready for your upcoming Halloween get-togethers? Treat your ghouls and ghosts to something spooky good this season. I’ve got a frighteningly easy recipe for you—it only has eight ingredients! 

 

Ingredients

3 cups of sugar

1 cup light corn syrup

4 1/2 cups salted peanuts

4 tablespoons unsalted butter

2 teaspoons vanilla extract

2 teaspoons baking soda

Vegetable spray (I use avocado oil spray)

1 bag of candy corn (or your favorite Halloween candy) 

 

Tools

2 baking pans, 12’x17”

5-quart saucepan with lid

Candy thermometer 

Metal spoon for stirring

Spatula

Airtight containers

 

Directions

  • Spray both baking pans with vegetable spray. 
  • Combine the sugar, corn syrup, and 1/2 cup water in the saucepan. Cover the pan and bring the mixture to a boil over high heat for about five minutes. 
  • Dissolve the sugar by swirling the pan often over the burner. Remember to keep the lid on!
  • Once steam begins to rise around the edges of the lid, remove the lid and reduce heat to medium.
  • Insert a candy thermometer and continue to boil until the temperature reaches 230 degrees for about a minute.
  • Add the peanuts and stir with a metal spoon until the mixture reaches 300 degrees. This will take about 13-18 minutes and the mixture should be a golden brown.
  • Immediately remove from heat and quickly add butter, vanilla, and baking soda. Again, stir with a metal spoon until butter melts and appears foamy.
  • Pour half of the mixture down the center of each baking pan; spreading it with a spatula.
  • Immediately add candy corn for some colorful Halloween decoration and press them down with the spatula. Be careful—it’s hot! 
  • Cool for an hour.
  • Break the peanut brittle into big pieces and package into cello bags to hand out to your friends and family. Tip: This brittle can also be stored in airtight containers for several weeks.
