For St. Paddy’s Day, I recommend adding something green to your traditional corned beef and cabbage menu. Try this amazing avocado salad to add even more luck to your day!
Avocado Salad
Ingredients
1/4 cup freshly squeezed lemon juice (If you have a Meyer lemon tree, just pull 2 lemons off of the branches!) Reserve two tablespoons of the juice.
2 firm, ripe avocados (I use organic)
1 red onion (or as my mother would say a Bermuda onion), diced to make 1/2 cup
Very good olive oil (watch my FB Live episode)
Kosher salt (the best for cooking!)
Freshly ground black pepper
Baby arugula
Directions
Pour 1/4 cup of lemon juice into a bowl.
Cut the avocados in half, scoop out the pit, and cut into 1/2-inch pieces. Add the avocados to the bowl with the lemon juice and toss ever so gently. Add the red onion and toss again.
Whisk together in another small bowl the remaining lemon juice, the very good olive oil, and 1/2 tsp of salt and pepper.
Pour dressing over the avocado salad until moist. Add some arugula, add more dressing, sprinkle salt and pepper to taste, and toss well. Have someone close by in the kitchen to taste test if the seasonings are appropriate and serve at room temperature.
