Let's Dip In

Did you love or do you still love to eat potato chips with Lipton onion soup mix with sour cream? My brother and I would devour a bowl in one sitting. Well, I’m sure my brother did way more damage than I did. Ha! Now as a life stylist, I have a more sophisticated onion dip recipe that includes freshly sautéed onions and fancier ingredients. Imagine that! 

 

Here’s the recipe that takes a little bit of time to make but leaves you with plenty of leftovers for noshing. It also makes a fun party appetizer. If you need some more dip ideas, Just Ask! 

 

 

Chipotle Onion Dip

 

Ingredients 

1/4 cup (1/2 stick) unsalted butter

1 teaspoon extra-virgin olive oil

2 large onions thinly sliced 

Fine sea salt

Freshly ground black pepper 

16-ounce container sour cream

8-ounce container crème fraîche

1/2 cup fromage blanc cheese 

3/4 teaspoon ground chipotle chili powder

Your favorite potato chips for dipping

 

 

Directions

Melt butter with olive oil in a heavy large skillet over medium-high heat. 

Add onions, sprinkle lightly with sea salt, and sauté until they begin to turn golden brown for about 15 minutes.

Reduce heat to medium and continue to sauté until onions are a deep golden brown for about 10 minutes longer.

Remove the onions from heat and cool them to room temperature.

Combine the sautéed onions, sour cream, crème fraîche, fromage blanc, and chipotle chili powder in a blender until creamy. Season with fine sea salt and freshly ground black pepper. 

Cover and chill for at least 1 hour. The best part about this recipe is that you can DO THIS 1 DAY AHEAD! But keep it refrigerated.

Serve with potato chips and dip in!
