It’s almost LOVE day! I have a great recipe to make for your sweetie (or sweeties) that I whipped up by just rummaging through my fridge. 

 

Basically, hunt through your fridge for leftovers and see if any of them will work in the recipe. It’s all about creativity! Need some help figuring out a recipe with your leftovers? Just Ask! 

 

A Lovely Red Sauce

Here’s what I used: 

Carton of cherry tomatoes

Greek salad leftovers: the feta, olives, and onions

Crushed or diced tomatoes in a can. (I found a can of fire-roasted diced tomatoes with garlic in my pantry.) 

1 tbsp of tomato paste

1 1/2 tsp of dried oregano, parsley, basil

Bay leaves 

Sliced red, yellow, and green peppers from fajita leftovers

Sliced onions, also from fajita leftovers

Grated imported Parmigiano Reggiano cheese

Olive oil

Salt and pepper to taste

 

Directions:

1) Sauté the leftover veggies in olive oil until heated through. If you need to buy fresh veggies because this recipe sounds amazing, then, by all means, go shopping for them! 

 

2) On medium-low heat, add in the carton of cherry tomatoes and let them simmer for approximately 20 minutes. With the back of a spoon, smash those cute little cherries. They literally pop, so be careful. 

 

3) Add in the feta (3-4 cubes is plenty!), olives and onions. Again, if you do not have a Greek salad laying around, use your imagination with some other leftover salads you may have stored way in the back of the fridge. 

 

4) Add the tomato paste and give it a good stir. Add as much salt to the pan to your liking and stir.

 

5) Sprinkle generously the oregano, parsley, and basil. Then, add 2-3 bay leaves. Lastly, sprinkle on the Parmigiano and simmer on the stove for about another 15 minutes. 

 

Now that you’ve got a delicious red sauce — it’s time to turn it into a meal! Boil some ziti pasta, reheat some frozen meatballs that you made from my video , sprinkle more parmigiana cheese on top and voila!
