When the days start getting cooler and I’m craving something warm and comforting, a hearty soup always does the trick.
A good friend of mine recommended this recipe called, Italian peasant soup and boy, is it delicioso! It reminds me of my Italian grandmother who would always have a pot of something yummy cooking on the stove.
If you organize ahead of time and gather all of the ingredients together, this is a quick and easy soup to make. If you’d like other quick and easy soup recipes, Just Ask!
Ingredients
- 1-pound hot Italian turkey sausage cut into thin slices (mild sausage is okay, too)
- 2 medium onions, chopped (I use my Classic Cuisinart for chopping)
- 6 garlic cloves, minced
- 1-pound boneless chicken, cut into small cubes
- 2-15 oz. cannellini beans (but any canned beans are fine)
- 2-14 oz. containers of chicken or turkey broth
- 2-14.5 oz. cans diced tomatoes
- 1 tsp. dried basil (I use freshly chopped basil)
- 1 tsp. dried oregano (I use freshly chopped oregano)
- 6 cups fresh spinach or kale, chopped
- Shredded Manchego cheese
Instructions
- Cook the sausage in a large skillet. I use my non-stick Le Creuset pan. It’s fun and fashionable! Cook until sausage is no longer pink and drain it leaving just a little bit of sausage juice in the pan.
- Add the onions and garlic to the skillet and sauté until golden.
- Add the chicken cubes and sauté until thoroughly cooked (no pink inside).
- Now, place all the goodies; the sausage, onions, garlic and chicken in a large stockpot. I like to use my All-Clad stainless steel pot.
- Lightly stir in the beans, broth, tomatoes, and fresh herbs. Add sea salt and pepper to taste.
- Cook uncovered for about 10 minutes. Add spinach or kale and heat until wilted.
- Top with shredded Manchego cheese and serve this soup with a warm loaf of Ciabatta bread, crusty on the outside, chewy on the inside. Yum!
- You can also make extra and freeze it for another cold winter’s day!
Extra Ingredient Tip: Boil some of your favorite pasta or rice and throw that in the pot, too! Fabuloso!
