What's in Robin's Fridge?

It’s summer party season, which means I’ll be looking into my fridge to see what I can conjure up with leftovers. If you’re like me, you’ll usually have several odds and ends from a previous summer party or yummy dinners. To make sure nothing goes to waste, here are some fresh ideas for your next dinner, lunch or even breakfast using items you already have on hand.  

What’s in Robin’s Fridge? Marinated Oil!

When there’s quite a bit of the marinated oil leftover on the bottom of a container of mozzarella balls, I’ll use it as a dressing and drizzle it over some fresh heirloom tomatoes and fresh basil. I’ll also drizzle the oil over some extra celery sticks and cucumber slices, which I can use for a lunch the following day. This multi-faceted marinated oil is great for sautéing fish or chicken, too!

What’s in Robin’s Pantry? Tuna Fish!

In order to save on calories, instead of mixing the tuna with mayo, I’ll add some juice from a leftover cornichon pickle jar and slice up some of the pickles and throw them in the tuna mix. And instead of spreading the tuna on bread, I’ll take some leftover celery sticks from a previous luncheon and stuff the celery boats with tuna for a light lunch. This is also great as an appetizer!

What’s in Robin’s Fridge? Sausage Links!

You can make a delicious faux hot dog with ½ of a fresh avocado and some leftover hot sausage links you grilled the night before. Simply sauté thin slices of the sausage, when all warmed, add the sausage slices to a leftover hotdog bun, throw in slices of avocado; add salt and pepper and you’re done! Yum!

What’s in Robin’s Fridge? Bacon!

Have a few slices of uncooked bacon lying around but not enough for a complete bacon and fried egg breakfast? Fry them up, let the slices cool, crumble and sprinkle them over steamed leftover French green beans. Steam or sauté the green beans in a little bit of bacon fat, add a tablespoon of water to steam the beans for a minute or two, squeeze some of that leftover lemon hidden by the egg carton that you used for your morning lemon water, add salt and pepper and you’re done. Delish!
